Salted Chocolate Peanut Butter Cookies

Salted Chocolate Peanut Butter Cookies


Craving something chocolatey, I started going through my saved recipes. And found these. Given how amazing the Salted Caramel Thumbprint cookies were, I decided to give these a try. Slightly adapted.

Makes: About 2 dozen cookies

Ingredients
1/2 cup butter, softened
3/4 cup natural chunky peanut butter
2/3 cup brown sugar
1/3 cup white sugar
2 eggs
2 tsp vanilla
1 1/4 cups flour
1/2 cup natural cocoa powder
1 tsp baking powder
1/2 tsp baking soda
1/2 tsp sea salt
1 cup semi-sweet chocolate chips
coarse sea salt for sprinkling

Directions
PREHEAT oven to 350F

BEAT peanut butter, butter, brown sugar, and white sugar until fluffy
ADD eggs
BEAT until incorporated
ADD vanilla
MIX thoroughly
ADD flour, cocoa powder, baking powder, baking soda, and salt
MIX until combined
ADD chocolate chips
STIR until evenly distributed

DROP by rounded tablespoon onto a cookie sheet
SPRINKLE with coarse sea salt

BAKE for 12 minutes
LET COOL

My Thoughts
1. These are my new most favorite cookie in the whole entire world. The peanut butter gives them a thick, creamy texture and the salty-sweet blends give them an extraordinary depth of flavor.

2. Because of this, these aren't the most kid-friendly cookies. They aren't super sweet, they are just ridiculously delicious.

3. Because these are drop cookies, they freeze easily. Which is exactly what I did with everything after the first dozen. I'm already looking forward to being able to pull these out of the freezer any time I want.
