When we wanted some pizza sauce to go with our pizza puffs, we decided to doctor up the oven roasted tomato sauce that we've come to love so much this summer.
Yields ~1 quart of sauce
Ingredients
5 medium tomatoes
4 cloves of garlic
1 1/2 tbsp freeze dried parsley
1 tbsp Italian seasoning
1/4 tsp sea salt
Directions
PREHEAT oven to 450F
SEPARATE garlic cloves, leaving skin on the cloves
WRAP garlic cloves in foil
CRIMP edges of foil tightly
SLICE tomatoes about 1/4" thick
ARRANGE tomato slices on baking sheet, do not overlap
SPRINKLE with parsley, seasoning, and salt
PLACE garlic packet on baking sheet
BAKE for 10-15 minutes one in the top 1/3 of the oven
SWITCH to a rack in the lower 1/3 of the oven
BAKE for another 10-15 minutes
UNWRAP garlic
REMOVE skins
PUREE garlic and tomatoes in a food processor
My Thoughts
1. This was a perfect pizza sauce for putting on pizza. Mild, but still flavorful.
2. However, our intention had been to use it as a dipping sauce and, for that purpose, I was rather underwhelmed. The flavor was too mild to really shine.
