Last Friday, I got it in my head that I needed to make something with peanut butter. I'm not sure where this burning desire came from since I normally dislike peanut butter cookies (gag me sweet), but since we had two jars of peanut butter in the fridge I turned to Joy. That being Joy the Baker who has never failed me, not once. Lo and behold she had a recipe for flourless peanut butter cookies. I was leery. I mean what kind of cookie has no flour? But I trust Joy, and she promised, so I baked. (Spoiler: It was totally worth it.)
Makes: 34 cookies
Ingredients
1 cup all natural peanut butter
1 cup sugar
1 egg
1 teaspoon baking soda
Directions
PREHEAT oven to 350F
COMBINE peanut butter and sugar in mixer until well combined (about 2 min)
ROLL into walnut sized balls (about 1" in diameter)
BAKE 10 minutes, until lightly browned
My Thoughts
1. With these I remembered why I like drop cookies--no rolling! That said, there is something zenful about squishing peanut butter.
2. These are a-freaken-mazing. Maybe it's the natural peanut butter (what IS the other stuff anyway? Peanut jam? There is sooooo much sugar in it.). Maybe it's the "I made them". But they are gooooood.
3. I attempted creating little hollows and placing mini chocolate chips in them--they did not melt. And mostly fell off. But it's okay, the chocolate was completely superfluous. (I know!) If you do want to add chocolate, I suggest gently pressing unwrapped Hershy's kisses into the top of cookies once you take them out of the oven. The chocolate will melt just enough to look shiny and perfect again.
3. Feel free to squish with a fork for the traditional criss cross pattern.
