When I was a kid we always made our brownies from the Betty Crocker box mix. And for years they had a recipe on the side for "Zebra Brownies" which were brownies layered with a cream cheese topping and swirled together. (Much like the Pumpkin Cheesecake Brownies I made last month). The recipe is no longer on the box, but having massively overbought cream cheese, I thought these would be a nice addition to our holiday baking. I used the cream cheese recipe from Pillsbury's site.
Makes ~ 21 mini brownie cakes.
Ingredients
Brownies
1 box Betty Crocker Fudge Brownie Mix
2 eggs
1/4 cup water
1/2 cup vegetable oil
Cream Cheese Topping
6oz cream cheese
1/4 cup sugar
1/2 tsp vanilla
1 egg
Directions
PREHEAT oven to 350F. Line a cupcake pan with paper liners, or lightly grease.
PREPARE box mix according to package directions.
In a separate bowl BLEND together the cream cheese topping ingredients.
SCOOP one teaspoon of brownie batter into each liner.
TOP with one teaspoon of cream cheese toping.
FINISH with 1/2 teaspoon of brownie batter placed in the center.
BAKE 20-402 minutes or until a toothpick inserted into the center comes out clean.
My Thoughts
1. Be careful not to undercook these or the cream cheese topping will be a squishy not-so-yummy mess.
2. I ended up with several accidental hearts (as seen above). I think these would be fantastic for Valentine's Day. Instead of topping the cream cheese with more of the brownie mixture, scoop all of the brownie mixture into the liners and reserve a bit of the cream cheese topping. Use food coloring to dye the reserved cream cheese topping and create hearts in the center of each brownie.
